After the crushing-destemming, a light maceration of the grapes is carried out (five hours at 8 °) and then proceed with a soft and long pressing. After cold static decantation, for about two weeks one part of the must ferments in barrique, the other in stainless steel tanks at a controlled temperature of 17 °. Subsequently, all the wine evolves in barriques placed in a thermo-controlled environment for 15 months and during this period periodic batonage operations are carried out on the fine lees. Then the wine rests another 12 months in concrete tanks. After filtration, bottling is carried out and after another three months the wine is put on sale.
