Picolit is considered a meditation wine that loves solitude; excellent as an appetizer together with patè croutons and at the end of a meal as an accompaniment to savory cheeses, pear jam or acacia honey.

winemaking

The grapes harvested in small boxes are placed in the drying room at controlled temperature and humidity for drying until mid-November. After a soft pressing, the grapes are vinified at a low temperature with indigenous yeasts and then the wine is left to refine for more than 24 months in steel barrels, carrying out periodic batonage operations. After the second spring from the harvest, the wine is bottled and after another six months the wine is marketed.
