winemaking

The whole grape is harvested early to preserve its natural freshness; the high acidity and low sugar concentration make it possible to obtain an excellent base for refermentation in an autoclave. After crushing-destemming, soft pressing and cold static decantation of the must, the first fermentation takes place at a controlled temperature of 17; subsequently the wine is aged in steel tanks for a few months. When the sparkling wine base is ready, the second fermentation takes place with the help of selected yeasts for five months, then it is then isobaric bottling at a pressure of 6 bar.
