Rosso DOC Venezia
NOBLE / HARMONIOUS / WARM
Grape: Merlot e Cabernet Sauvignon.
Origin: Provincia di Treviso.
Location vineyards: Gorgo al Monticano e Mansuè, called “Baite”.
Soil: clay soil with calcareous subsoil
System: Guyot with a plant density from3.500 to 6.250 plants/ht
Harvest: the grapes are hand harvested only when they reach the full phenolic maturity.
Alcohol: 13° vol.
These grapes Merlot and Cabernet sauvignon, are picked up and vinified separately.
Once destalked and pressed the grapes, follow the fermentation (and maceration) at controller temperature with selected yeast for 15 days in stainless steel tank to extract tannins and anthocyanius. At the end of the maceration, wine is separated from marc to obtain the “vino-fiore”. After the “malolactic procees“ and an aging in tonneaux for 12 – 18 months, wine is bottled. After further 6 months of aging in the bottle, it is ready to sell.
Red and intense ruby color with garnet hints.
On the nose it reminds ripe red fruit such as raspberry, match with spicy notes and a delicate violet perfume.
On palate it is vinous and warm. Fruit and spice hints are well mixed and they are supported by soft and velvety tannins.
It goes well with tasty-meat dishes and such a cuts of meat like steak “alla fiorentina”.
To serve: 18°-20° C.
