Rosso DOC Venezia
NOBLE / HARMONIOUS / WARM
Grape: Merlot e Cabernet Sauvignon.
Origin: Provincia di Treviso.
Location vineyards: Gorgo al Monticano e Mansuè, called “Baite”.
Soil: clay soil with calcareous subsoil
System: Guyot with a plant density from3.500 to 6.250 plants/ht
Harvest: the grapes are hand harvested only when they reach the full phenolic maturity.
Alcohol: 13° vol.
These grapes Merlot and Cabernet sauvignon, are picked up and vinified separately.
After destemming and crushing, fermentation (and maceration) follows at a controlled temperature with selected yeasts in stainless steel tanks for 15 days to extract the tannins and anthocyanins.
At the end of maceration the wine is separated from the marc to obtain the “flower-wine”. After malolactic fermentation and aging in tonneaux for 12-18 months, the wine is bottled. Before being released, it is left to refine in the bottle for a further 6 months.
Red and intense ruby color with garnet hints.
On the nose it reminds ripe red fruit such as raspberry, match with spicy notes and a delicate violet perfume.
On palate it is vinous and warm. Fruit and spice hints are well mixed and they are supported by soft and velvety tannins.
It goes well with tasty-meat dishes and such a cuts of meat like steak “alla fiorentina”.
To serve: 18°-20° C.
