Soft pressing of the grapes to separate the must from grape skins. Static must decantation, then, at a controlled temperature (16°-18°) and on selected yeasts, the first fermentation begins.

The second fermentation or “Prise de mousse”, takes place in pressurized stainless steel tanks according to the CHARMAT METHOD approximately for 60 days.

This is an important phase because it is the moment when fine bubbles generate.

A straw pale color with greenish hints and a fine and PERSISTENT PERLAGE. A balanced bouquet that reminds of citrus fruits and green apple. A perfume of liliac and acacia flowers with a good minerality that gives it freshness.

Prosecco Setten is an excellent aperitif suitable with light meals: SASHIMI, TEMPURA or with white meats and not too seasoned cheese. Nowadays we can talk about Prosecco as one of a fundamental “ingredient”of the International Mixology.

Serve chilled: 6°-8° C.
